Blueberry Cream Scones

August is berry season in Alaska. What could be better than blueberries fresh from the bush making their way into a delicious breakfast treat?

  • 4 cups all purpose flour
  • 6 teaspoons baking powder
  • ½ cup granulated sugar
  • 2 teaspoons salt
  • ½ cup cold butter
  • 4 eggs
  • ⅔  cup heavy cream
  • 1 pound blueberries

1) Preheat oven to 350 degrees.

2) Combine flour, baking powder, sugar, and salt.

3) Cut cold butter into dry ingredients.

4) In a separate bowl, combine cream and eggs. Add to flour mixture.

5) Fold berries gently into mixture.

6) Divide dough into 12 pieces and place on greased baking sheet

7) Bake for 12 – 15 minutes, or until top of scones is golden brown.
