Blondies


These Blondies are a favorite sweet snack on our lunch line. Many a guest has enjoyed this tasty treat while nestled in the tundra on a ridge, enjoying the grand vistas of the park.

Original recipe comes from Cook’s Illustrated.

 

Blondies

Serves 36-48

  • 3 ⅓  cups flour
  • 2 ½ teaspoons baking powder
  • 2 ¾ teaspoons salt
  • 3 cups unsalted butter, melted and cooled
  • 5 ¾ cups light brown sugar
  • 8 eggs, lightly beaten
  • ¼ cup vanilla extract
  • 1 cup white chocolate chips
  • 1 cup chocolate chips
  • 2 cups walnuts or pecans, toasted and coarsely chopped

1) Line two half sheet pans or two 13 x 9 baking pan with overhanging foil to allow for easier removal and cutting. Line pan with cooking spray or butter.

2) Whisk together flour, baking powder, and salt and set aside. In a seperate bowl, whisk together butter with light brown sugar until just combined. Add eggs and vanilla and mix well.

3) Fold in the flour mixture that was set aside. Fold in nuts and both kinds of chocolate chips until evenly distributed.

4) Divide evenly among pans and smooth the tops.  Bake at 325 F for 30 minutes, or until the top is shiny, cracked and light golden brown. Cool and cut into 36-48 squares depending on your size preference.
